These are baked beans with attitude! I saw an advertisement for a name brand Grillin' Beans with some of these ingredients .... so, I just decided to make my own. Now, to be clear, I've never had the canned version, nor have I investigated it's ingredients further than just a glance at the ad, so, I can't say they'd taste similar, but, these were sure tasty and perfect with grilled meat. Ingredients:
1 can black bean, drained |
1 can white kidney beans, undrained |
1 cup frozen or fresh corn |
1 roasted red pepper, chopped |
couple t olive oil |
1 large onion, chopped |
3 cloves garlic, minced |
1/4 cup molasses |
2t whole grain mustard |
1t dry mustard |
couple t honey |
about 14oz tomato sauce(i used spicy) |
1-3 chipotle peppers, minced |
about 1t adobo sauce(or all of what's in the can...;-) |
dash of liquid smoke if not cooking on a charcoal grill |
kosher or sea salt and fresh ground black pepper |
Directions:
1. In high heat proof skillet or dutch oven(cast iron is best), saute onion in the olive oil over medium heat until just tender. 2. Add garlic and cook about 2 more minutes. 3. Add all remaining ingredients and stir well. 4. Heat on grill or in 400 oven for about 45-60 minutes until heated through and thickened. |
