A hula-va good cake! LOL! Ingredients:
6 tablespoons macadamia nuts, chopped |
1/4 teaspoon salt |
1 1/4 cups raisins, chopped |
1/4 cup shredded coconut |
2 tablespoons sugar |
1 cup butter |
1 (8 ounce) cream cheese, softened |
1 1/2 cups sugar |
2 teaspoons vanilla |
4 eggs |
2 cups flour |
2 tablespoons baking powder |
Directions:
1. Grease a Bundt pan. 2. Combine nuts, coconut and 2 tablespoons sugar. Sprinkle pan with mixture. 3. Cream butter and cream cheese. 4. Add sugar and beat until fluffy. Add vanilla. 5. Beat in eggs one at a time. 6. Add flour, baking powder and salt. 7. Beat 10 minutes. 8. Mix in raisins and any leftover nut and coconut mixture. 9. Bake in 300° oven for 1 1/2 hours. 10. Cool upside down in pan on cake rack. 11. Loosen cake and Invert on serving plate. |
