This is a very popular dish in south india...it's eazy to prepare.sambar masala can be obtained from indian grocer or make your own....This is one of the variety of making sambar....spicy veg sambar... Ingredients:
1 cup yellow dal -toordal (pressure cook) |
2 tbsp channadal |
1 bunch coriander leaves |
2 tbsp coriander seeds |
2 tbsp cumin |
1 bunch curry leaves |
ginger-garlic -2 cloves |
1 tsp grated coconut (optional) |
1 tsp hing-asafotida |
1 tsp jaggery or sugar |
1 tsp fenugreek |
mix sambhar vegetables (drumstick,brinjal,potato) |
1 tbsp mustard |
4 tbsp oil |
1 large onions |
2 tbsp peppercorns |
6 piece redchilli |
1 tbsp rice |
salt to taste |
tamrind water-1/2 c |
tomatoes -1 cut medium |
1 tsp turmeric |
Directions:
1. Sambhar masala:- Heat heavy pan, over medium heat, and add the mustard seeds, fenugreek seeds, cumin seeds, black peppercorns 2. And coriander seeds,red chillies ,rice, channadal. Stir and dry roast for 3-4 minutes 3. Reducing the heat if necessary to take care that the spices don't burn. 4. In the same pan, heat 2 teaspoons oil and roast garlic ginger ,hing ,turmeric When they start to colour continue roasting. 5. Add the pan contents to the bowl and cool along with the spices. 6. Add all to a grinder and make it into a fine paste. 7. Sambhar making:- Heat one teaspoon of the oil in a heavy pan, over medium heat, and add the mustard seeds, fenugreek seeds,hing ,red chillies &cumin seeds. 8. Add the onions ,turmeric powders, stir add curry leaves ,chopped green chillies and mix vegetables 9. Add tomatoes tamrind juice and add water and cook till the vegetables are half done add sambhar masala 10. Add mashed dal and cook for 30 min in slow flame.nice fragrance of sambhar 11.
