This is the salsa that goes with the Spinach Frittata in Phase 1. Ingredients:
4 plum tomatoes, seeded and chopped |
2 scallions, minced |
1 garlic clove, minced |
2 tablespoons fresh cilantro, minced |
1 tablespoon fresh lime juice |
1/4 teaspoon salt |
1/8 teaspoon fresh ground black pepper |
Directions:
1. In a large bowl, stir together the ingredients. 2. Serve fresh at room temperature. |
