meat loaf Ingredients:
1 tbs olive oil |
1 onion, chopped |
1/2 red bell pepper, chopped |
1/2 green bell pepper, chopped |
1/2 lb ground beef |
1/2 lb ground turkey breast |
1 cup salsa |
1 large egg, beaten |
3/4 tsp salt |
1/2 tsp black pepper |
1 clove garlic, minced |
1/2 cup cooked brown rice |
Directions:
1. Preheat oven to 350F 2. Heat the oil in a small skillet over medium heat. Add the onion and bell peppers and cook for 5 minutes, or until tender. 3. In a large bowl, combine the beef, turkey salsa, egg, salt, black pepper, and garlic. Stir in the vegetables and rice. Place the mixture in a round baking dish and pat into an oblong loaf. 4. Bake for 45 minutes, or until a thermometer inserted in the center registers 160F and the meat is no longer pink. |
