Found this in Prevention magazine dated 2003 while clearing up the basement 188 cals per serving Ingredients:
1 (6 ounce) can no-added-salt tomato paste |
1/2 cup dry red wine |
1/2 cup water |
1 garlic clove, minced |
1/4 teaspoon dried oregano |
1/2 teaspoon dried basil leaves |
1/4 teaspoon salt |
1 lb ground white turkey meat |
1 cup oatmeal |
1/4 cup liquid egg substitute |
1/2 cup shredded zucchini |
Directions:
1. Preheat oven 350°F. 2. Combine the tomato paste, wine, water, garlic, spices in a small saucepan. Bring to boil and reduce heat to low, simmer uncovered for 15 minutes; set aside. 3. Combine turkey, oatmeal, egg, zucchini and 1/2 cup of the tomato mixture in a large bowl. Mix well and shape into loaf and place in an ungreased 8 x 14 loaf pan. Bake for 45 minutes. Discard any drippings. You can either pour 1/2 of the remaining tomato mixture over the top and bake for a further 15 minutes longer and use the remainder as sauce on the side or pour all of it over the loaf and bake for a further 15 minutes. 4. Cool for 10 minutes before slicing. |
