South African Pumpkin Fritters

South African variation on an old favourite! Quick and Easy!
Ingredients:
fritters
4 c cooked mashed pumpkin
2 eggs
1 c flour
pinch of salt
1 teaspoon baking powder
30 ml (2 tablespoons) heaped of sugar
cinnamon sugar
1oz ground cinnamon
6oz sugar
caramel sauce
250 ml sugar
500 ml water
500 ml milk
30 ml margarine
20 ml cornstarched mixed to a paste with water
5 ml caramel essence
Directions:
1. Fritters
2. Combine all ingredients, making a soft batter and fry spoonfulls in shallow oil till both sides are lightly browned.
3. Drain on paper.
4. Serve warm with cinnamon sugar or caramelsauce.
5. Cinnamon Sugar
6. Mix the Cinnamon and Sugar together.
7. Sprinkle over Fritters as much as desired
8. Caramel Sauce
9. Cook all toghether and pour over fritters just before serving.
