Simple lamb stew with a South African twist Ingredients:
700gram diced lamb |
2 medium onions, diced |
3 gloves garlic, crushed |
2 courgettes, sliced |
2 tins chopped tomatoes |
300ml lamb stock |
1 fresh green chilli, de-seeded |
1 tsp chilli powder |
1/2 tsp chilli flakes |
2 tbs tomato puree |
1 tsp dried parsley |
olive oil |
Directions:
1. Dice onions and brown 2. Add garlic, fresh chilli, and chilli powder 3. In a separate pan, brown lamb in batches 4. Add to onion, and add sliced courgette 5. Add tinned tomatoes, tomato puree, and stock 6. Bring to simmer, then cook on a low heat for 90 minutes 7. Add parsley five minutes before serving 8. Serve with basmati rice or naan bread |
