South African Curried Banana Salad |

While helping my lil sis with her school project on South Africa we came across this yummy and healthy recipe on Disney Channel's Pass The Plate Ingredients:
2 tablespoons extra virgin olive oil |
2 thinly sliced red onions |
3 tomatoes, seeded and sliced |
4 ounces balsamic vinegar |
2 tablespoons sugar |
1 tablespoon cornstarch |
1 tablespoon curry powder |
2 ounces apricot jam |
6 firm ripe bananas |
salt |
pepper |
1 lb fresh spinach |
Directions:
1. add olive oil to frying pan and heat on medium heat. 2. add onions and sweat for 8 minutes. 3. add tomatoes and heat until saucy. 4. combine vinegar, cornstarch, sugar and curry powder and bring to a boil, stirring constantly. 5. add jam and combine with tomato mixture. 6. allow to cool and reserve until ready to complete salad. 7. add mixture to bananas and serve over a bed of fresh spinach. |
