This a very old recipe that my mother used over 50 years ago. It wsas first published in 1931 by Household magazine in their Searchlight cookbook. Ingredients:
1 1/3 cups flour |
1/2 tsp salt |
1/2 tsp baking soda |
1/4 cup melted shortening |
1 cup sour milk (see directions) |
2 eggs, divided uses |
1 tbs sugar |
Directions:
1. Sift flour, measure, and ssift with salt and baking soda. 2. Beat eggs yolks 3. Add sugar and shortening. 4. Mix well. 5. Add milk alternately with sifted dry ingredients to egg mixture. 6. Beat egg whites until stiff and fold into mixture. 7. Bake in hot waffle iron. 8. Note: Make milk sour by adding 1tbs white vinegar 9. Note (2) I have made this by incorporating whole eggs and not beating the egg whites when in a hurry and the result is good. |
