These scones turn out great if you use white flour or if you use the new Nutri Flour. In the US I think it might be called White Wheat am not sure. Nutri flour is made by Robin Hood here in Canada lighter than whole wheat but the nutritional info is about the same. Read more . It Is actually lower in Sat. and Trans. Fat. and Higher in Fiber. For the Weight Watchers Point Counters these are only 1 point each Ingredients:
2 1/4 cups nutri flour (or can use unbleached flour) |
1 1/2 tbsp sugar |
2 tsp baking powder |
1/2 tsp baking soda |
1/2 tsp salt |
1/2 cup fat free vanilla yogurt |
1/2 cup fat free sour cream |
2 large eggs |
2 tbsp light butter melted and cooled |
1 tbsp cream |
vanilla sugar |
Directions:
1. Preheat oven 425* 2. Combine well flour, baking powder, baking soda, salt, and sugar 3. In smaller bowl combine and beat well eggs, yogurt, sour cream, and cooled butter. 4. Pour into center of dry and stir until just combined. Dump out on lightly floured surface and pat out into a rectangle about 1/2 inch thick. 5. Brush with cream and sprinkle with vanilla sugar 6. Cut into 16 squares and place on baking sheet and place in oven 7. Reduce heat to 400* and bake until golden 12-15 minutes. Remove and cool scones on a rack. 8. Variation: 9. Omit 1 egg and use 3/4 cup more of the Yogurt in its place |
