Sour Cream Rhubarb Coffee Cake |

Thinking spring here, for a lovely rhubarb coffee cake, Tasty and appealing flecks of pinkish rhubarb throughout cake Ingredients:
2 cups diced rhubarb( could be apples , peaches etc. ) |
1 1/2 cups sugar |
1 tsp baking soda |
1 cup sour cream |
dash salt |
2 cups flour |
dash nutmeg to taste |
butter to taste |
Directions:
1. Mix rhubarb and 1/2 cup sugar and let stand 30 minutes 2. Stir baking soda into sour cream 3. Sift, flour, salt and 1 cup sugar 4. Combine everything together, mixture will be thick 5. Spread mixture in a 9 inch pan 6. Sprinkle with extra sugar, nutmeg and some pats of butter 7. Bake 350F for 30 to 40 minutes or tested done 8. Serve warm or at room temperature |
