My coworker's aunt is one of those farm wives that has always cooked and baked from scratch. She's always bringing us sweet treats that have been perfected over time. These raisin bars are my favorite of hers (that, and her French Apple Pie - can't wait to get that recipe). Read more . These have a crunchy crust and topping with a creamy, raisin-filled center.
Ingredients:
1 1/2 c. quick-cooking oats, uncooked
1 1/2 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 c. brown sugar, packed
1 c. butter or margarine
1 - 16 oz. carton sour cream
2 c. raisins (she also adds walnuts - i've added them, too 1/2 - 1 c.)
1 1/2 c. sugar
4 egg yolks
3 tbsp. cornstarch
1 tsp. vanilla
Directions:
1. Preheat oven to 350 degrees F.
2. Combine oats, flour, soda, salt, and brown sugar. Cut in butter with pastry blender until mixture is crumbly. Reserve half of the mixture and set aside for topping. Press the other half of mixuture into a lightly greased 15 x 10 x 1 jelly roll pan. Bake for 10 min. Remove from oven and set aside.
3. In large saucepan, combine sour cream and remaining ingredients (except reserved topping), stir well and cook over medium heat until thickened. Pour onto prepared crust.
4. Sprinkle reserved topping over filling and gently press in with fingertips. Bake for 20 min. until browned. Cool in pan; cut into bars and chill. These freeze well.
