                    These are from the Georgia Department of Agriculture on Georgia Pecan Classics Ingredients: 
                    
                        
                                                1 cup sour cream  |  
                                                2 cups sugar  |  
                                                1 teaspoon vanilla  |  
                                                1/4 teaspoon baking soda  |  
                                                2 tablespoons butter (not spread or tub product) or 2 tablespoons margarine (not spread or tub product)  |  
                                                4 cups pecan halves (georgia pecans preferred)  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Combine sour cream and sugar. 2. Cook over medium heat to 245F on a candy thermometer (almost hard ball stage). 3. Turn off heat. 4. Add vanilla, baking soda and butter (or margarine). 5. Beat for 2-3 minutes. 6. Add pecans, stirring to coat. 7. Turn onto lightly buttered baking sheet. 8. Cool and separate pecan halves.                              |
