Sour Cream Nut Cookies With Burnt Butter Icing |

Tender sweet cookie, a breeze to mix and the icing makes the cookie sublime. Ingredients:
2/3 cup of unsalted butter |
1 1/3 cup of sugar |
2 eggs |
3 1/3 cup of flour |
2 teaspoons of baking powder |
1/2 teaspoon of baking soda |
1 teaspoon of salt |
1 cup of dairy sour cream |
1 cup of finely chopped (fresh) pecans |
icing |
8 tablespoons of butter |
2 cups of sifted confectioner's sugar |
1 teaspoon of vanilla |
2 - 4 tablespoons of boiling water |
Directions:
1. Beat together butter, sugar and eggs thrououghly. 2. Stir dry ingredients and add alternately with sour cream. 3. Stir in nuts. 4. Drop by teaspoon two inches apart on a greased cookie sheet. 5. Bake at 400 degrees about 8 minutes. 6. Icing: 7. Melt butter and let cook until golden brown. Blend in conf. sugar and vanilla off heat. Stir in some boiling water. Icing will be thin. 8. If it thickens while cooling, add a little more boiling water. Keep warm and spread over cooled cookies. |
