Ingredients:
3 pounds cooked and quartered baby red potatoes |
1/2 cup mayonnaise |
1/2 cup sour cream |
1/2 cup thinly sliced green onions |
1/3 cup chopped fresh cilantro |
2 tablespoons sauce from canned chipotle peppers in adobo sauce |
3/4 teaspoon lime zest |
2 tablespoons lime juice |
salt and freshly ground pepper to taste |
Directions:
1. Stir together potatoes, mayonnaise, sour cream, green onions, cilantro, adobo sauce, lime zest, and lime juice. Season with salt and freshly ground pepper to taste just before serving. |
