This is my husband's very favorite recipe. It's one of mine as well because it's so easy to make. It only takes about 5 or 10 minutes prep time, then just pop it in the oven and do whatever you want for a while. Ingredients:
4 boneless skinless chicken breasts |
1/2 cup melted butter or 1/2 cup margarine |
8 ounces light sour cream |
15 -20 crushed ritz crackers |
Directions:
1. Place the chicken breasts in a 9x13 glass baking pan. 2. Poke holes in the chicken with a fork (more holes=more tender chicken). 3. Pour the melted butter on top of the chicken breasts. 4. Using a spoon or rubber spatula, spread the sour cream evenly over the chicken. 5. Sprinkle the cracker crumbs evenly over the sour cream-covered chicken. 6. Bake, uncovered at 350 degrees for 55 minutes. 7. NOTE: This recipe is fantastic fresh, but it does not make good leftovers. So eat up while you can! |
