Sour Cream-cheese Potato Casserole |

This casserole never fails to be a favorite. Print extra copies of this recipe for anyone you serve it to...they always ask for it. By the way, this is great as a leftover. You can even try making breaded fried patties out of any leftovers (good luck finding any leftover). Ingredients:
3 medium all purpose potatoes |
1 cup medium cheddar, coarsely grated |
1 cup sour cream |
1/3 cup green onions, chopped 1/4 |
1/4 cup (1/2 stick) butter |
1 tsp. salt |
Directions:
1. Boil unpeeled potatoes until cooked through, cool. 2. Grate potatoes (skin and all) coarsely and place in a large casserole being careful not to mash or compress them. 3. Put butter and cheese in a small heavy sauce pan over VERY LOW heat, and melt the cheese. 4. Add the sour cream and green onions. 5. Salt the potatoes. 6. Pour cheese mixture over the potatoes and toss LIGHTLY. 7. Bake at 350 degrees for 20 minutes, just until hot and cheese is melted. 8. Serve. |
