Sour Cream Cheese Chicken Enchiladas |

This is one of my FAVORITE dishes to make AND eat! Ingredients:
1 pt. sour cream |
12 oz. shredded jack cheese |
4 oz. can diced green chilis |
1 c. sliced black olives |
1 doz. 8 flour tortillas |
10-12 oz. can enchilada sauce |
2 c. shredded cheddar cheese |
2 chicken breasts cubed |
Directions:
1. Brown chicken in skillet -sed aside. 2. Mix first 4 ingredients in a large bowl. 3. Spread 1/2 cup of mixture & chicken in a line on each tortilla and roll up. 4. Place in an 8 x 12 inch pan. 5. Pour enchilada sauce evenly over top. 6. Sprinkle with Cheddar cheese and bake at 350 degrees for about 30 minutes until hot and bubbly. |
