Sour Cream Blueberry Pancakes |

Works with fresh or frozen blueberries. Ingredients:
pancakes |
2 cups all-purpose flour |
1/4 cup sugar |
4 teaspoon baking powder |
1/2 teaspoon salt |
2 eggs |
1 1/2 cups milk |
1 cup sour cream |
1/3 cup butter-melted |
1 cup fresh or frozen blueberries |
topping |
1/2 cup sugar |
2 tablespoon cornstarch |
1 cup cold water |
4 cups fresh or frozen blueberries |
Directions:
1. Pancakes: 2. In a large mixing bowl,combine flour,sugar,baking powder,and salt. 3. Beat together eggs,milk,sour cream,and butter. 4. Stir into flour mixture. Mix until just combined. 5. Fold in blueberries. 6. Pour batter by 1/4 cupfuls onto a greased hot griddle. 7. Turn when bubbles form on top of pancakes. 8. Cook until golden brown on both sides. 9. Topping: 10. In a large saucepan,combine sugar,cornstarch,and water until smooth. Add blueberries. 11. Bring to a boil over medium heat. 12. Cook for 2 minutes or until thickened,stirring constantly. 13. Remove from heat and server over pancakes. |
