I've had this recipe for years, and it's always been a hit. (unfortunately, I don't remember where it came from. I've always loved banana bread, but found it can sometimes be quite dry. This recipe is NEVER dry! It is always moist and yummy! Ingredients:
1 c. sugar |
1/2 c. oil |
2 eggs |
1 c. mashed bananas |
1/2 c. sour cream |
1 tsp. vanilla |
1 1/2 c. flour |
1 tsp. baking soda |
1/2 tsp. salt |
Directions:
1. Preheat oven to 350. 2. Grease and flour two bread pans. 3. In a large bowl, beat together sugar and oil. 4. Add eggs, bananas sour cream and vanilla; blend well. 5. Add flour, baking soda and salt; stir until dry ingredients are moistened. 6. Pour into prepared bread pans. 7. Bake at 350 for 50 to 60 minutes or until toothpick inserted comes out clean. 8. Cool 5 minutes. 9. Remove from pan. 10. Cool completely. 11. Wrap tightly and store in refrigerator. 12. For Muffins: 13. Prepare as above. 14. Bake in muffin tin for 15-20 minutes or until toothpick comes out clean. |
