I found this recipe on to use up some fresh apples, and it was a surprise! I'd never thought of a cookie topped with apples. It was really very good and even refreshing. We loved the cookie bottom, too. Ingredients:
2 cups all-purpose flour |
2 cups packed brown sugar |
1/2 cup butter |
1 cup chopped nuts |
1 teaspoon baking soda |
1 -2 teaspoon cinnamon |
1/2 teaspoon salt |
1 cup sour cream |
1 teaspoon vanilla |
1 egg |
2 cups apples, chopped fine (2-3 med. apples) |
Directions:
1. Preheat oven to 350 degrees. 2. In a large bowl, combine first 3 ingredients. Blend at low speed until crumbly. Stir in nuts. Press 2-3 cups of crumb mix firmly on an ungreased 13 x 9 pan. To remaining crumbs, add all other ingredients except apples. Blend well, stir in apples. Spoon batter evenly over crumb base. Bake at 350 degrees for 35-45 minutes until tested comes out clean. If desired, top squares with whipped cream or ice cream, or sprinkle with powdered sugar. Cool and cut into bars. |
