Sour Cream and Chives Whipped Potatoes |

Ingredients:
4 large potatoes, peeled and cut into large pieces |
2 tablespoons butter |
1/4 cup sour cream |
1/2 cup milk |
salt and pepper |
1 tablespoon chives, freshly snipped |
Directions:
1. Place the potatoes in a large saucepan and cover with water. 2. Cook until soft. 3. Drain and place potatoes in a mixer bowl. 4. Add the butter and sour cream. 5. Whip on low. 6. Gradually add the milk and increase the mixer's speed, whipping until the potatoes are smooth. 7. Add the chives and check the seasonings, adding more salt and pepper as needed. 8. Serve warm. |
