A very different tabbouleh from a Weight Watchers cookbook. 2 points per 1 cup serving.
Ingredients:
1 1/2 cups boiling water
1 cup bulgur
1 small red onion, minced
1/4 cup parsley, minced
1/4 cup mint, minced
3/4 cup jarred sour cherry, chopped, with 3 t juice reserved
1/2 teaspoon fresh ground pepper
1/4 teaspoon salt
Directions:
1. Pour boiling water over bulghur in bowl; set aside 15 minutes.
2. Fluff bulghur with fork.
3. Add all ingredients and toss.
