Ingredients:
1 teaspoon red chile, roughly chopped
1 onion, sliced
1/2 teaspoon mustard seeds
1/2 teaspoon coriander seed
1/2 cup tamarind juice
400 g eggplants
2 teaspoons cumin seeds
2 tomatoes, pureed
1 pinch turmeric powder
salt
2 tablespoons oil
Directions:
1. Cut the brinjal in round pieces. Heat oil in a pan and fry mustard seeds, cumin seeds and coriander seeds.
2. Add brinjal and onions to it and stir fry. Add the remaining ingredients. Mix well and serve.
