I've never been a big split pea soup fan but felt it was something I should eat. So, in the interest of fixing healthy soups for my family and clearing out the pantry while I was at it - I put together this crock pot friendly soup that is mostly split pea. Ingredients:
1 ham hock |
1 lb dried split peas |
1/2 cup dried red lentils |
1 cup carrot, chopped |
1/3 cup baby corn, chopped |
1/4 cup pine nuts, chopped |
1 teaspoon garlic, chopped |
1 medium onion, chopped |
1/2 teaspoon seasoning salt |
1 teaspoon dried thyme |
1 teaspoon dried tarragon |
8 cups chicken broth |
Directions:
1. put carrots, baby corn, onion, and pine nuts in the food processor and chop. 2. put all ingredients except chicken broth in the crock pot. 3. add 6 cups of the chicken broth. 4. cook on high for 3 hours. 5. turn down to low for another 2 hours and add the remaining 2 cups of chicken broth (if you like it thick or thinner adjust the broth to your preference). |
