Soup with Carrot and Chicken |

Ingredients:
2 cups chicken broth |
1 cup tomato or vegetable juice |
1/4 cup long grain rice |
1/2 boneless chicken breast, cooked and cut into 1/2 inch dice |
green onion, thinly sliced |
Directions:
1. Bring broth, juice and rice to a boil and simmer for 15 minutes. Add cooked chicken and simmer 5 minutes longer. Ladle out and garnish with green onion. |
