Soup So Good Your Kids Dont Know Its Split Pea |

Growing up I never liked my mother's split pea soup. I decided to create one, that was flavorful and yummy. Just like the title, the kids loved it and ate it up. I served it with some crusty garlicky sourdough bread and it was a hit. Ingredients:
split peas - 1/2 lb. soaked and drained |
andouille or smoked sausage - 1 lb chopped |
leek or onion - chopped |
bell pepper - chopped |
garlic - 3 cloves chopped |
chicken stock - 2 qts. |
shrimp - 1 lb. medium sized |
salt, pepper, and cajun seasoning to taste. |
bay leaves - 2 |
Directions:
1. In a soup pot, render sausage. 2. Add bell pepper and leeks, and soften until wilted. 3. Add garlic and saute for 2 to 3 minutes. 4. Add chicken stock and bring to simmer. 5. Add Bay leaves. 6. Add split peas, bring to simmer and allow to cook until peas have broken down. 7. Taste and season. 8. Add Shrimp in the last 10 minutes of cooking. 9. Re taste and season if necessary. |
