Buttery little bites to accompany your soup. This is a Jacques Pepin recipe. Ingredients:
1/2 cup finely chopped leek |
4 tablespoons butter |
1/2 cup cold milk |
1 egg |
1/2 teaspoon salt |
1 teaspoon sugar |
1/2 cup all-purpose flour |
1/2 cup oatmeal |
1 teaspoon baking powder |
Directions:
1. Preheat oven to 425°F. 2. Butter a mini muffin pan. 3. In a large Pyrex cup, put a half cup finely chopped leeks and 4 Tablespoons butter. 4. Nuke them until the butter melts and add 1/2 cup cold milk. 5. Allow the mixture to cool to room temperature. 6. With a fork, beat in an egg, 1/2 teaspoon salt and 1 teaspoon sugar. 7. Then mix in 1/2 cup A/P flour, 1/2 cup oakmeal flakes and 1 teaspoon baking powder. 8. Fill 12 minu cups and bake for 10 minutes. 9. Turn out and serve warm. |
