Soup Aux Cerises Sweet Cherry Soup |

This is a sweet meaty tasting soup. My son (the Chef) made it here a few nights ago. I just go the recipe from him. It is different but real good! I do need to start taking photos of all of my recipes. Ingredients:
1 1/2 lb. dark, sweet cherries (reserve 24 of them for garnish) |
2 tbsp sugar |
2 cups hot water |
3 cups veal stock, beef stock, or pork stock (your pick) |
Directions:
1. Remove pits from dark sweet cherries and put them in a sauce pan with 2 tbsp of sugar, and 2 cups of water. 2. Simmer cherries for 10 minutes then put through fine sieve. 3. Mix the cherry pulp and liquid together into a thin puree, stir in 3 cups of veal stock, and heat again to a boiling point. Turn off! (Do not over cook.) 4. Cut the garnishing cherries into quarters and place on the bottom of 6 tea cups. 5. Pour hot soup over them and top with unsweetened whipped cream. |
