Soup - Adzuki, Black Bean and Vegetable |

Easy and Tastey. This batch had a trace of chili powder and cayenne from the chili before it. Ingredients:
3 1/2 cups onion |
1 tbs chopped garlic |
4 cups low sodium chicken broth |
29 oz diced tomatoes |
2 gala apples |
2 cups corn |
3 cups raw peas |
3 cups green beans |
2 cups adzuki beans |
1/2 cups black beans |
1 tsp turmeric |
1 tsp cardamom |
1/2 tsp nutmeg |
1/2 cup sliced mushrooms |
Directions:
1. The raw adzuki beans and black beans are cooked separately and added to the soup after all the vegetables and other ingredients have been cooked together. 2. Adzuki beans double in size so this would be 4 cups of cooked adzuki. Black beans triple in size so there would be 1 1/2 cups of cooked black beans. |
