Souffle Ala Cheesy Grits

What a great dish to serve at breakfast, brunch or even at lunch or dinner as a side. These grits are so cheesy and so creamy. We love them and know you will too.
Ingredients:
1 quart milk
1/2 cup butter
1 cup grits
1 teaspoon salt
1/2 teaspoon white pepper
1/2 cup butter
2 eggs beaten
4 ounces gruyere cheese grated
1/2 cup parmesan cheese
Directions:
1. Bring milk to a boil.
2. Add 1/2 cup butter and stir in grits.
3. Cook stirring constantly until mixture is the consistency of oatmeal (about 5 minutes).
4. Remove grits from heat then add salt, pepper and beaten eggs.
5. Beat mixture well.
6. Add the 1/3 cup butter then stir in grated gruyere and pour into a greased 2 quart casserole.
7. Sprinkle with parmesan cheese and bake at 350 for 1 hour.
