You can also use parmesan,edam,or white cheese.
Ingredients:
2 c water
1 tsp salt or adobo
1 1/2 c yellow cornmeal
1/2 c grated cheddar cheese
3 c corn oil
Directions:
1. Bring water to a boil with the salt in a small saucepan. Add the cornmeal reduce the heat to low and cook. Stirring constantly for 3 to 5 mins until thickened. Remove the pot from the heat and add the grated cheese. Let the mixture cool a little than shape 2 tblsp of the dough into a stick about 3 inches long. Repeat with the remaining dough. Heat oil in a skillet until hot not smoking and fry until golden brown on all sides.
