this is m vegan take on sopa de lima. hope you guys like it !
Ingredients:
1 cup of rice
2 cups of green lentils
3 liters of vegetables broth (i like to make my own)
1 bunch of fresh cilantro
3 ripe tomatoes
1 habanero pepper
3 limes
zest of 1 lime
Directions:
1. poor broth into a large pot and bring to boil
2. add the lentils cook for 20 minutes
3. add the rice and punctured habanero and let simmer for another 20 minutes
4. dice the tomatoes and rough chop the cilantro
5. remove from heat and stir in tomatoes and cilantro as well as the zest and lime juice
6. let sit for 15 minutes
7. serve and garnish with lime slices cilanto leaves and a drizzle of EVOO
8. Enjoy !!!
