a mexican cream soup very delicious tasting .........hope you enjoy it ....................... courtesy of international cuisine Ingredients:
3- eggs |
1/2 cup milk |
1/4 -teaspoon salt |
dash of pepper |
dash of nutmeg |
2- tablespoon butter |
2- tablespoons all-purpose flour |
1-103/4 ounce can of chicken broth |
3/4 - cup water |
1/2- cup whipping cream |
salt and pepper again to taste |
Directions:
1. beat eggs with milk, salt, pepper, and nutmeg. 2. pour into a butterrede 8x8x2 inch loaf pan. 3. set pan in a larger shallow pan on the oven rack. 4. pour hot water around the loaf pan to depth of 1 inch. 5. bake in 325 f. degree oven 25 to 30 minutes or until a knife comes out clean. 6. chill; then cute custard into small cubes.............. 7. meanwhile , melt butter , stir in flour. 8. add condensed chicken broth and water all at once; 9. cook and stir untill thickened and bubbly. 10. stir in cream, gently stir in cubed custard. 11. heat through. 12. season to taste with additional salt and pepper 13. makes 4 servings ......... and .enjoy this light delicious soup.... |
