This is a Mexican meatball soup. Simple and light. warm you up from the inside out! Ingredients:
1/2 pound lean ground beef |
1/2 pound lean ground pork |
2 corn tortillas, soaked in water |
1 egg beaten |
1 small onion finely chopped |
salt and pepper to taste |
6 cups beef broth, i use soup base the commerical kind |
1 cup tomato puree |
1 medium onion chopped |
1 clove garlic minced |
1 teaspoon of more cumin |
1 teaspoon chili powder |
Directions:
1. Put soaked drained tortillas in the blender with 1/4 cup water and blend well. 2. Mix meats with tortillas, egg and the small onion 3. Form tiny walnut-sized balls 4. Make a broth with the remaining ingredents 5. Bring to a boil and simmer for 10 minutes 6. Gently add the meatballs, a few at a time 7. When it starts to simmer again, cover and cook for about an hour 8. Serve hot and garnish with cilantro and chopped fresh onion, chopped tomatoes and lime wedges... 9.
