on account fo being asked for my chicken soup recipe - here it is - at least the basic one. a very old friend in england called this 'jewish penicillin' - and it works! still! better then any antibiotic! Ingredients:
one whole chicken, nice and fat |
some freeze-dried chicken broth |
1 onionpeeled, with some cloves stuck in |
1 bay leave |
some lovage (levisticum offizinale - liebstöckel or maggikraut) |
'suppengrün' (a mixture of vegetables which go into any soup stock - pieces of celery root, parsley (the root as well as the leaves), a carrot, some leek, all tied together) |
salt |
Directions:
1. wash chicken, pat dry 2. put into pot with salted water and granulated chicken broth 3. add onion, bay leave and lovage 4. put lid on, bring water to a boil, remove froth with slotted spoon. 5. reduce temperature to middle setting. 6. after approx. 30 minutes, remove bay leave, onion and lovage 7. add 'suppengrün' 8. leave to cook for about another 30 minutes. 9. remove chicken 10. put broth through strainer. 11. now, add sliced carrots, some leek, whatever vegetables you'd like, slice them up. let them cook until tender - leave soup as is,w ithout vegetables. 12. you may want to cook separately either rice or noodles to add to the soup. don't cook them in the soup as it will make the broth look milky 13. now, whenever i have a cold, (and also when i don't), i cook chicken soup. and breeeeeaaaath in the steam. drink it out of a soup cup. 14. believe me - it is simply the best. good for the soul, too. |
