Soo's Khai Yad Sai or Meat Omelet |

Healthy adaptation of Thai pork omelet served for lunch or dinner. Ingredients:
1/2 lb ground turkey |
5 eggs |
1 medium onion |
1 tsp garlic |
1 tbs fish sauce |
3 red chili peppers |
2 tsp oil |
1/4 cup cilantro |
1 tsp sugar |
Directions:
1. Chop garlic into small pieces and onions into inch long pieces. Cut Chilies in half. 2. Beat eggs & set aside. 3. Put 1 tsp oil in pan. Add garlic, chilis, & chopped onions. Cook until transluscent. 4. Add turkey*, fish sauce, sugar & cilantro. 5. Remove from pan. 6. Clean pan and put 1 tsp of oil into it. Swirl it around. 7. Put egg batter in pan. When slightly firm, add cooked turkey. Flip omelet over. 8. Put cilantro on top as garnish & sever. 9. *Many prefer ground pork to turkey for taste, but turkey is a much healthier option. |
