Red Beans & Rice Ingredients:
2 cups brown basmati rice |
1/2 cup red kidney beans |
1 onion |
1 cup green pepper |
1 cup celery |
2 tbsp chopped jalapeno peppers |
2 cups chicken stock |
1 tbsp parsley flakes |
4 cloves garlic |
1 tbsp chopped chives |
1 tbsp coconut oil |
1 tbsp grapeseed oil |
Directions:
1. Sautee onion, celery and green pepper until translucent, add other ingredients except rice and simmer for twenty minutes 2. Cook brown rice separately and fold into sauce mix. 3. Add chopped chives and serve 4. Serving size is just over half a cup |
