Sonoran Spiced Pork Chops |

When you need a head start on supper, rub the Mexican-style spice mixture on the chops the day before. These pork chops are also great for the grill. The cooking time will be about the same. Ingredients:
2 tablespoons ground cumin |
1 tablespoon ground coriander |
1 tablespoon paprika |
1 tablespoon dried thyme |
3/4 teaspoon salt |
1/2 teaspoon black pepper |
1/4 teaspoon ground red pepper |
4 (4-ounce) boneless center-cut loin pork chops (about 3/4 inch thick) |
cooking spray |
4 lemon wedges |
Directions:
1. Prepare broiler. 2. Combine first 7 ingredients in a small bowl; rub spice mixture onto both sides of pork chops. 3. Place chops on rack of a broiler pan coated with cooking spray; broil 6 to 8 minutes on each side or until desired degree of doneness. Serve with lemon wedges. |
