Sonora Cheese-Potato-Green Chili Stew |

This recipe is from the Sonora govt. It's a hearty and homey stew. Ingredients:
1 medium onion |
1 tomato |
3 canned poblano chiles |
3 idaho potatoes (or your favorite type) |
1 tablespoon cooking oil |
1/2 quart milk |
1/2 quart water |
2 cups cheese, crumbly or shreddable |
1 teaspoon salt (approx. to taste) |
Directions:
1. Boil milk and water together. 2. Dice poblano chilies and potatoes. 3. Chop tomato and onion in fine pieces. 4. Chop or separate cheese in shreds. 5. Heat cooking oil and sautee potatoes, onion, tomate and chilies. 6. Add water-milk mixture. 7. Salt to taste. 8. Simmer until potatoes are well cooked but not mushy. 9. Add the cheese. 10. Remove from stove and cover to keep hot until serving time-. |
