Found this old favorite hidden in my Threadgill's cookbook. Ingredients:
7 ounces green chilies, chopped |
1/2 cup bisquick-type baking mix or 1/2 cup flour |
4 cups monterey jack cheese, shredded |
12 eggs |
1 cup evaporated milk |
1 cup cottage cheese |
1/2 teaspoon salt |
1 dash paprika |
pepper |
Directions:
1. Preheat oven 325°. 2. Spray 13x9 glass dish with non-stick spray. 3. Toss chiles and baking mix, then spread evenly onto bottom of dish. 4. Top with shredded cheese. 5. In a large bowl, beat remaining ingredients, and pour over cheese. 6. Bake 35 to 40 minutes, or until light brown. |
