Something To Do With Okra |

One of Great Aunt Mabel's favored ways to serve okra. She always had tomatoes growing and she made wonderful stewed tomatoes. This was a dish to fix when she didn't feel like frying. The bacon fat makes the dish sing . Ingredients:
2 1/2 cups of fresh okra, washed and dried |
2 medium yellow onions, chopped |
bacon fat |
1 1/2 cups of stewed tomatoes |
salt and pepper to taste |
4 slices of crumbled bacon |
Directions:
1. Heat enough bacon fat to barely cover the bottom of your skillet. 2. Saute okra and onion for five minutes. 3. Add tomatoes, salt and pepper and cook over medium heat until the okra is tender. 4. Serve with crumbled bacon on top. |
