Great for an exotic change of pace. Goes well with fried chicken Summer layered noodle salad Ingredients:
2 pkg somen, boiled (angel hair pasta will substitute, 1 lb box) |
1/2 head shredded lettuce |
2 cups finely cubed ham or chinese red bar-bq pork (char siu) |
2 eggs, scrambled flat (don't stir them in the pan, just fry ) |
1 pkg imitation crab or lobster flakes, chopped |
3-4 finely chopped green onions |
sauce |
2 t sesame seeds |
2 t sugar |
1 tsp salt |
1/4 cup canola oil |
3 t vinegar (rice or apple) |
2 t soy sauce |
Directions:
1. boil noodles according to package, use extra salt in boiling water 2. drain noodles and rinse thuroughly with cold water until cold 3. lay noodles in 9 x 13- inch pan 4. layer ingredients over noodles as follows: 5. shredded lettuce 6. scrambled egg 7. chopped imitation crab 8. meat of choice 9. green onion 10. mix sauce in bottle 11. shake very well and pour over entire salad 12. *** somen cooks very quickly as does angel hair. do not over cook!!! ***egg isn't necessary 13. *** tastes best served very cold |
