This makes a great summer potluck dish. The ingredient list is flexible. You can substitute cilantro for green onion. Char siu and kamaboko can be found in oriental markets. I got this recipe from a Hawaiian friend Ingredients:
1 package somen noodles, boiled or 1 package other thin pasta |
1 head napa cabbage, shredded (chinese cabbage) |
1 cup ham or 1 cup char siu pork, chopped |
2 eggs |
1 kamaboko, cut in thin strips (fish cake) |
3 stalks green onions, chopped |
cucumber, cut in slivers (optional) |
carrot, shredded (optional) |
4 tablespoons sesame seeds |
4 tablespoons sugar |
2 teaspoons salt |
1/2 cup cooking oil |
6 tablespoons japanese rice wine vinegar |
4 tablespoons soy sauce |
Directions:
1. Scramble the eggs. 2. Slice in strips. 3. Lay somen inn a 9x13 pan. 4. Garnish with lettuce, ham, eggs, kamaboko and green onions. 5. Put dressing ingredients in a bottle. 6. Shake well and pour over salad. |
