Ingredients:
1/2 cup butter or 1/2 cup margarine, softened |
1 cup brown sugar, packed |
1 egg |
1 3/4 cups all-purpose flour |
2 teaspoons baking powder |
3/4 teaspoon cinnamon, ground |
1/2 teaspoon salt |
1/4 teaspoon nutmeg, ground |
1/8 teaspoon clove, ground |
1/4 cup milk |
1 1/2 cups zucchini, grated |
1/2 cup walnuts, chopped |
1/2 cup raisins |
1 teaspoon orange rind, grated |
Directions:
1. In a mixing bowl, cream the butter and brown sugar; add the egg and mix well. 2. Combine the dry ingredients; add alternately with milk to creamed mixture. Stir in zucchini, nuts, raisins, and orange peel. 3. Drop by teaspoonfuls 2 inches apart onto greased baking sheets. 4. Bake at 350°F for 12-14 minutes or until edges are lightly browned and cookies are set. 5. Makes about 4 dozen. |
