What better way to use up the rest of the zucchini growing in your garden than to make soft and yummy cookies?! A friend had given me this recipe many years ago and I have never actually made these but they do sound good. Ingredients:
1/2 cup shortening |
1/2 cup granulated sugar |
1 cup brown sugar |
2 eggs, beaten |
3 cups peeled, coarsely grated zucchini |
2 1/2 cups flour |
2 cups quick cooking oatmeal |
1 tsp baking powder |
1/2 tsp baking soda |
1 tsp cinnamon |
1/2 tsp salt |
1 cup chopped nuts |
1 cup raisins |
Directions:
1. Cream shortening, granulated sugar, brown sugar, and eggs until fluffy. 2. Stir in zucchini. 3. Sift together flour, baking powder, baking soda, cinnamon and salt, and add to zucchini mixture. 4. Stir in oatmeal until well blended. 5. Add nuts and raisins. 6. Drop by spoonfuls onto greased cookie sheets. 7. Bake at 375 degrees for 12 to 15 minutes. |
