This is from the Women's Weekly Stews, Braises & Casseroles cookbook. Ingredients:
3 cups water |
2 cups vegetable stock |
2 cups polenta |
1 cup milk |
1/4 cup parmesan cheese, finely grated |
Directions:
1. Combine water and stock in a large saucepan; bring to the boil. 2. Gradually add polenta to the liquid, stirring constantly. Reduce heat; simmer, stirring, about 10 minutes or until polenta thickens. 3. Add milk and cheese; stir until cheese melts. |
