I served this soft , custard like ice cream at Thanksgivng with cake or pie. The candied ginger brings the flavor to new heights. Serve with ginger cookies, lemon cake, pumpkin, spice or carrot cake and anything that ginger can compliment. Read more . Espcially great with pumpkin pie! Ingredients:
1 pint half and half or cream |
heaping 1/3 cup sugar |
1 tsp pure vanilla |
2 to 3 tbs, finely chopped candied ginger |
Directions:
1. Dissolve the sugar in the half and half or cream by stirring and heating. 2. Do not boil. 3. Cool , add vanilla and chill in refrigerator. 4. Once well chilled, process in your ice cream maker according to instructions. 5. When forming a soft formed custard texture , add the ginger. 6. Then freeze well at least overnight 7. This will not freeze solid and it's texture is more like a soft custard. 8. You can still scoop it out. though 9. The flavor is wonderful 10. Makes a small amount but serve it with a small ice cream scoop and you should get at least 6 servings |
