Using clear vanilla extract will keep the macaroons pearly white, but if you don't have it, regular vanilla will work fine. Ingredients:
4 egg whites |
2 2/3 cups sweetened flaked coconut |
2/3 cup sugar |
1/4 cup all-purpose flour |
1/2 teaspoon clear vanilla extract |
1/4 teaspoon salt |
1/4 to 1/2 teaspoon almond extract |
Directions:
1. Stir together all ingredients in a large bowl, blending well. Drop dough by teaspoonfuls onto lightly greased baking sheets. 2. Bake at 325° for 18 to 20 minutes. Remove to wire racks to cool. |
